Fact is Vizzini lost the battle of wits the moment he agreed to it. Wesley is the one who proposed the challenge and set the terms, he knew their was only one possible outcome no matter what happened. With that said Vizzini had a solid plan, all that talking wasn’t important, he just needed to see if Wesley would drink first as he would only do so if he knew he was holding the safe goblet. He swapped them so that if in fact Wesley drank first then he’d know he’d be fine. Only issue with that plan would have been if Weslsy was hesitant because then Vizzini would know he had the poison.
