How do you attach sugar roses to a wedding cake?
4. Securely place your sugar or gum paste flowers on the cake. Place your sugar flowers on the cake in posy picks (available from cake decorating stores). These prevent wires from touching the cake. I add fondant paste to the posy pick to anchor the sugar flower stem. I start at the center, placing smaller flowers first, then larger ones, and work outwards. Sometimes you need to take a flower out to add a filler. Push the pick into the cake at an angle. If you push it in vertically and too close to the edge, you may push out some of the cake and break the outer icing. Push the pick into the cake so it’s hidden. Visible stems are fine. If your flower is heavy and close to the cake, add some royal icing for extra security.
5. Be creative! Relax when arranging flowers on the cake. It can be stressful, but you can do it! Stand back and check your arrangement. You may need to add or remove something. Bend stems and leaves to make them look more natural. Let your creativity run wild. Don’t worry about any small breakages. Real flowers aren’t perfect, and a few small breakages add to their authenticity. No one will notice.
6. Get your sugar or gum paste flower arrangement ready to take with you. I arrange as much as I can before delivering the cake. I put bubble wrap or kitchen roll between flowers to keep them from falling. Some buds and leaves can be bent out of the way for transport and then back when on site. If flowers are loose, wobbly, or precarious, I may remove the stem for transport.

Alexandria, I have never made gumpaste flowers before, but I have a 50th birthday cake order due for the 19th and was hoping to do some. The cake will be a 6″ tier on top of an 8″ tier, iced with a buttercream. The customer would like me to use fall colors (the favorite color is purple) and have some flowers on the cake. They said the flowers could be real or silk or…… I did have the impression that they weren’t real into buttercream flowers. I didn’t really want to deal with real flowers and thought I’d look for artificial ones. Now I’ve been thinking of trying gumpaste flowers. Could you recommend some relatively simple flowers I could make, using fall colors, including purple. This is new for me and I really am not sure where to start. I’m not even sure how many flowers I would need for that size cake. I am planning on adding a thin, decorative fondant wrap partially around each tier. I’d appreciate any input and thoughts you might have. 😊
