Why is it called birch?
The word “birch” comes from the Proto-Indo-European root word “bhereg,” meaning “bright.” The Gaelic word for birch is beithe. It is found in many Highland place names, such as Glen an Beithe in Argyll and Allt Beithe in Glen Affric. Many place names in England and Scotland include birch, such as Birkenhead, Birkhall, and Berkhamstead. It’s more common in northern England and Scotland. Alfred Lord Tennyson made the word “silver” popular when he used it to describe birch. When S.T. Coleridge called it the “Lady of the Woods,” he may have been using an existing folk term for the tree. Birch is used in many ways. The wood is strong, dense, and straight-grained, making it suitable for handles and toys and good for turning. It was used to make strong bobbins, spools, and reels for the cotton industry. Babies’ cradles were often made of birch wood. In 1842, J.C. Loudon said that the Highlanders of Scotland made everything from it. He listed all kinds of tools and building materials. The wood was useful for many things, but the wood was also easy to get in the Highlands. Loudon also says that the branches are used for fuel in whiskey distillation, and the spray is used for smoking hams and herrings. People used the bark for tanning leather and sometimes for making rope instead of candles. The spray was used for thatching houses and sleeping on when heather was scarce. The sap can be tapped in spring and made into birch wine. This is still done in the Highlands today. The Druids made the sap into a cordial to celebrate the spring equinox. Folklore and herbalism say the birch has different medicinal properties. The leaves are diuretic and antiseptic, and help with urinary tract infections. The leaves and sap were used to treat kidney stones, rheumatism, and gout. The sap was used for skin problems and the bark was said to ease muscle pain when applied externally.

What is the best height for a wedding cake?
A note on tier height: I’ll explain this more later. Your cake size depends on the height of your tiers. Many online charts are not helpful because they are out of date. A standard wedding cake tier was usually about 3″ tall 15-20 years ago. Modern wedding cake tiers are usually around 5-6″ tall. That’s a big difference in slice size. Some cake designers have taller tiers as standard. You may also choose a cake with different-height tiers. Your cake maker will advise on the sizes you need and what will work for your guest number. I’m offering advice based on a 6″ cake tier height, which is my standard. When you’ve cut a cake before, it’s probably been in wedges. I’m way late to the party but I’ve watched dozens of birch tree cake tutorials and this is by far my favorite. I love how the heart looks carved just the way someone with a knife on a real tree would do it. It’s a small detail but makes all the difference. Most of the other articles I’ve seen have a rounded heart, with some even using a perfect heart shaped cookie cutter to make it. It totally breaks the illusion. Yours though is perfect.
